Shirley Centre does have two stands outside the pharmacy that are probably just anti-ramraid bars, but still they're on the footpath so you could lock up your bike there. Also I've been trying to add all the bike parking I see to OSM so this post has been pretty useful for that :)

I recently required work to be done on a coach which meant an overnight stay in Chch. I had taken my newly acquired road bike. my mates laughed that it was an essential auxiliary transport in case of an emergency, however, the coach was out Hornby, and it was a short ride into Hornby where I thought I could find somewhere to stay, but no such luck, all booked out. The nearest place I could find was right in near Church Corner. The manager loves bikes and has an expensive mountain bike, which he said he bought it to replace one which had been stolen out of his garage when left open for five minutes one day. I digress, so as far as parking my bike, I could either leave it in his locked garage or park it in his private yard behind the motel. I chose the back yard. It was the first time I have stayed in accommodation and needed a park for a bicycle and it worked out very well

The Palms mall is a good example of dumb design. There is a row of bike stands parallel to the main vehicle entrance. However there is a kerb so you have to stop riding and lift your bike up it. The opposite side slopes down nicely and would be easy to ride up to the stands - if it wasn't a row of carparks. No room to squeeze the bike between the parked cars. It's not the easiest place to get out from either, especially when it's busy.

Westfield Riccarton have under cover parking in the main car park by Pack & Save and access isn't too bad, but they are quite twisted as they have been hit on the end so the top support doesn't line up with the bottom one. It is disc brake friendly though.
Also close by in behind AMI on Riccarton road are excellent covered stands although you can't get into the shop from the back. However you can walk through the Avanti shop :).
There are bike stands at Tower junction outside Hub cycles.
There are also stands at the CBS Arena in the corner of the car park across from the main entranece.
